- 1.5 lbs boneless, skinless chicken breasts
- 1 (15-ounce) jar salsa (Whole30 compliant – check label for added sugars)
- 1 (15-ounce) can diced tomatoes, undrained
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 4 large russet potatoes
Instructions
- Step 1: Wash and scrub the potatoes thoroughly. Pierce them several times with a fork. Microwave the potatoes on high for 5-7 minutes to slightly soften them, making them easier to fill. Alternatively, you can bake them in the oven until slightly softened.
- Step 2: Place the chicken breasts in the slow cooker. Pour the salsa, diced tomatoes, chili powder, cumin, garlic powder, and onion powder over the chicken. Stir to combine.
- Step 3: Cook on low for 6-8 hours or high for 3-4 hours, or until the chicken is cooked through and easily shreds with a fork.
- Step 4: Once the chicken is cooked, remove it from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and stir to combine with the sauce.
- Step 5: Cut the potatoes in half lengthwise. Carefully scoop out some of the potato flesh from the center, leaving about a 1/2-inch border. Mix the scooped-out potato with the chicken mixture.
- Step 6: Fill the potato skins with the chicken and potato mixture. You can return the stuffed potatoes to the slow cooker for the last 30 minutes of cooking on low to warm them through, or bake them in a preheated oven at 375°F (190°C) for about 20 minutes until heated through and slightly browned.
Notes
- Store leftover stuffed potatoes and chicken in an airtight container in the refrigerator for up to 3 days.
- Reheat leftover stuffed potatoes in the microwave or oven until heated through, adding a splash of water or broth if needed to prevent dryness.
- Serve these hearty stuffed potatoes with a side of steamed green beans or a simple salad for a complete and satisfying Whole30 meal.
- For extra flavor, consider adding a pinch of smoked paprika or a few dashes of your favorite hot sauce to the chicken mixture before cooking.
