- 2 tablespoons olive oil
- 1 tablespoon dried oregano
Instructions
- Step 1: Preheat oven to 375°F (190°C). Place chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/4 inch using a meat mallet.
- Step 2: In a bowl, combine crumbled feta, spinach, sun-dried tomatoes, Parmesan cheese, minced garlic, and oregano.
- Step 3: Spread the feta mixture evenly over each flattened chicken breast. Tightly roll up each chicken breast and secure with toothpicks.
- Step 4: Heat olive oil in an oven-safe skillet over medium-high heat. Brown the chicken rolls on all sides for about 2-3 minutes per side.
- Step 5: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Step 6: Remove from oven, let rest for 5 minutes before removing toothpicks and serving.
