- 3 cups granulated sugar
- 3/4 cup (1 1/2 sticks) unsalted butter, cut into pieces
- 2/3 cup heavy cream
- 1/4 cup light corn syrup
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup chopped red candied apple pieces (or red food coloring gel)
- 1/4 cup chopped pecans (optional)
Instructions
- Step 1: In a large, heavy-bottomed saucepan, combine the sugar, butter, heavy cream, corn syrup, and salt. Cook over medium heat, stirring constantly, until the sugar is dissolved.
- Step 2: Continue cooking, stirring occasionally, until the mixture reaches 234-240°F (soft-ball stage) on a candy thermometer. Be careful not to burn the mixture.
- Step 3: Remove the saucepan from the heat and let it cool slightly, about 5 minutes.
- Step 4: Add the vanilla extract and beat the mixture with a wooden spoon or electric mixer until it thickens and loses its glossy sheen. This may take several minutes. Be patient!
- Step 5: Quickly stir in the chopped candied apple pieces (or food coloring gel if using) and optional pecans.
- Step 6: Pour the fudge into a greased 8×8 inch baking pan and spread evenly. Let cool completely before cutting into squares.
Notes
- Store your Poison Apple Fudge in an airtight container at room temperature for up to a week, but hide it well from any unwanted fairytale visitors!
- If your fudge is too firm, microwave it for just a few seconds to soften it slightly before serving (but not so long that it melts).
- Serve this wickedly delicious fudge with a scoop of vanilla ice cream or alongside a cup of hot apple cider for an extra cozy treat.
- For a truly intense apple flavor, use a combination of candied apple pieces and a tiny drop of red food coloring gel to amplify the 'poison' effect.
