- 1 (14 ounce) can sweetened condensed milk
- 1 tablespoon unsalted butter
- 1/4 cup heavy cream
- 1/4 cup shelled, unsalted pistachios, finely ground
- 1/4 teaspoon pistachio extract
- Pinch of salt
- 1/4 cup shelled, unsalted pistachios, chopped (for coating)
- Butter, for greasing
Instructions
- Step 1: Grease a plate or small baking dish with butter. This will be where you pour the brigadeiro to cool.
- Step 2: In a medium, nonstick saucepan, combine sweetened condensed milk, butter, heavy cream, ground pistachios, pistachio extract, and salt.
- Step 3: Cook over medium-low heat, stirring constantly with a spatula or wooden spoon, making sure to scrape the bottom of the pan to prevent burning.
- Step 4: Continue cooking and stirring until the mixture thickens and starts to pull away from the sides of the pan and you can see the bottom of the pan for a few seconds when you drag the spatula through it (about 8-10 minutes). The mixture should be thick enough to hold its shape.
- Step 5: Pour the brigadeiro mixture onto the prepared plate and let it cool completely to room temperature, then chill in the refrigerator for at least 2 hours to firm up.
- Step 6: Once chilled, roll the brigadeiro into small balls (about 1 inch in diameter). Roll each ball in the chopped pistachios, pressing gently to adhere. Serve immediately or store in an airtight container in the refrigerator.

- Store leftover brigadeiros in an airtight container in the refrigerator for up to a week.
- If the brigadeiros become too firm after refrigeration, let them sit at room temperature for a few minutes before serving.
