Delicious mint chocolate chip rice krispie treats recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 6 cups Rice Krispies cereal
  • 1/2 cup (1 stick) unsalted butter
  • 10 oz mini marshmallows
  • 6 oz semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 1/2 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • Green food coloring (optional)

Instructions

  1. Step 1: In a large microwave-safe bowl, melt the butter. Once melted, add the marshmallows and microwave for 1-2 minutes, stirring halfway through, until melted and smooth.
  2. Step 2: Stir in the peppermint extract and salt into the melted marshmallow mixture. Add a few drops of green food coloring if desired, and stir until evenly colored.
  3. Step 3: Gently fold in the Rice Krispies cereal until evenly coated.
  4. Step 4: In a separate microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
  5. Step 5: Pour the Rice Krispie mixture into a greased 9×13 inch baking pan. Gently press the mixture evenly into the pan.
  6. Step 6: Drizzle the melted chocolate over the top of the Rice Krispie treats. Let the treats cool completely before cutting into squares and serving.

Notes

  • Store leftover treats in an airtight container at room temperature to keep them chewy and fresh for longer.
  • If you want a softer bite, microwave a square for just a few seconds to slightly warm the marshmallows.
  • Cut these into smaller squares and serve with a scoop of vanilla ice cream for an extra decadent dessert.
  • For extra minty flavor, use Andes mints instead of chocolate chips for a refreshing twist!
