- 6 cups Rice Krispies cereal
- 1/2 cup (1 stick) unsalted butter
- 10 oz mini marshmallows
- 6 oz semi-sweet chocolate chips
- 1/4 cup heavy cream
- 1/2 teaspoon peppermint extract
- 1/4 teaspoon salt
- Green food coloring (optional)
Instructions
- Step 1: In a large microwave-safe bowl, melt the butter. Once melted, add the marshmallows and microwave for 1-2 minutes, stirring halfway through, until melted and smooth.
- Step 2: Stir in the peppermint extract and salt into the melted marshmallow mixture. Add a few drops of green food coloring if desired, and stir until evenly colored.
- Step 3: Gently fold in the Rice Krispies cereal until evenly coated.
- Step 4: In a separate microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
- Step 5: Pour the Rice Krispie mixture into a greased 9×13 inch baking pan. Gently press the mixture evenly into the pan.
- Step 6: Drizzle the melted chocolate over the top of the Rice Krispie treats. Let the treats cool completely before cutting into squares and serving.
Notes
- Store leftover treats in an airtight container at room temperature to keep them chewy and fresh for longer.
- If you want a softer bite, microwave a square for just a few seconds to slightly warm the marshmallows.
- Cut these into smaller squares and serve with a scoop of vanilla ice cream for an extra decadent dessert.
- For extra minty flavor, use Andes mints instead of chocolate chips for a refreshing twist!
