- 8 oz whole wheat pasta
- 1 head broccoli, cut into florets
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 1/4 cup lemon juice
Instructions
- Step 1: Cook pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
- Step 2: While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant. Be careful not to burn the garlic.
- Step 3: Add broccoli florets to the skillet and cook for 5-7 minutes, stirring occasionally, until tender-crisp.
- Step 4: Add the cooked pasta to the skillet with the broccoli and garlic. Stir in the Parmesan cheese, parsley, lemon juice, salt, and pepper.
- Step 5: Add a little of the reserved pasta water if needed to create a light sauce. Toss everything together to combine.
- Step 6: Serve immediately and enjoy!
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in a pan on low heat, adding a splash of water or pasta water to prevent sticking.
- Serve with a side of grilled chicken or fish for a complete and satisfying meal.
- To prevent the garlic from burning, add a pinch of red pepper flakes to the oil before adding the garlic; the flakes will absorb some of the heat.
