Ingredients
- Fresh green beans, trimmed: 1 pound
- Olive oil: 2 tablespoons
- Garlic, minced: 4 cloves
- Lemon juice: 2 tablespoons
- Lemon zest: 1 teaspoon
- Parmesan cheese, grated: 1/4 cup
- Salt: 1/2 teaspoon
- Black pepper: 1/4 teaspoon
Instructions
- Step 1: Wash and trim the green beans. Steam or blanch them in boiling water for about 5-7 minutes, until crisp-tender. Drain well and set aside.
- Step 2: Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds, until fragrant, being careful not to burn it.
- Step 3: Add the cooked green beans to the skillet. Toss to coat them with the garlic-infused oil.
- Step 4: Pour in the lemon juice and sprinkle with lemon zest. Season with salt and pepper. Toss again to combine.
- Step 5: Remove the skillet from the heat. Stir in the grated Parmesan cheese until it's melted and evenly distributed.
- Step 6: Serve immediately, garnished with additional Parmesan cheese if desired.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, gently sauté the green beans in a skillet over medium-low heat until warmed through, adding a splash of water if needed to prevent drying.
- These green beans make a vibrant side dish for grilled chicken, fish, or a simple pasta.
- For extra flavor, lightly toast the Parmesan in the skillet after removing the green beans, then crumble over the top as a garnish.
