Ingredients
Scale
- 1 pound carrots, peeled and chopped into 1-inch pieces
- 4 tablespoons unsalted butter, melted
- 2 tablespoons honey
- 2 tablespoons soy sauce (low sodium preferred)
- 2 tablespoons garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Step 2: In a large bowl, combine the melted butter, honey, soy sauce, minced garlic, ginger, black pepper, and red pepper flakes (if using). Whisk until well combined to create a smooth sauce.
- Step 3: Add the chopped carrots to the bowl with the honey garlic butter sauce. Toss gently to ensure all the carrots are evenly coated.
- Step 4: Spread the carrots in a single layer on the prepared baking sheet. Avoid overcrowding to ensure even roasting.
- Step 5: Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized, flipping them halfway through for even cooking.
- Step 6: Remove from the oven and serve immediately. Enjoy!
Notes
- Store leftover roasted carrots in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in a microwave or oven until warmed through, avoiding overcooking which can make them mushy.
- These honey garlic butter carrots are a fantastic side dish for grilled meats, roasted chicken, or even as a flavorful addition to a grain bowl.
- For extra depth of flavor, consider adding a teaspoon of sesame oil to the sauce along with the ginger.
