- Large flour tortillas: 2
- Ground beef: 1 pound
- Taco seasoning: 1 packet
- Refried beans: 1 can (16 ounces)
- Shredded cheddar cheese: 2 cups
- Diced tomatoes: 1 cup
- Sliced black olives: 1/2 cup
- Sour cream: 1/2 cup
Instructions
- Step 1: Preheat oven to 375°F (190°C). While the oven is heating, brown ground beef in a skillet over medium-high heat. Drain any excess grease.
- Step 2: Stir in taco seasoning with the recommended amount of water specified on the packet. Simmer for 5-7 minutes, or until the liquid is absorbed.
- Step 3: Spread a thin layer of refried beans evenly over each tortilla.
- Step 4: Sprinkle each tortilla with half of the seasoned ground beef, followed by half of the shredded cheddar cheese.
- Step 5: Bake for 10-12 minutes, or until the cheese is melted and bubbly and the tortillas are slightly crisp.
- Step 6: Remove from oven and top with diced tomatoes, sliced black olives, and a dollop of sour cream before serving.
Notes
- Store leftover Mexican pizza in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat in a skillet over medium-low heat to re-crisp the tortilla.
