Instructions
- Step 1: Preheat oven to 400°F (200°C). Wash and cut potatoes into halves or quarters, depending on their size. Ensure even-sized pieces for even cooking.
- Step 2: In a large bowl, toss the potatoes with olive oil, minced garlic, oregano, thyme, salt, and pepper. Make sure the potatoes are evenly coated with the oil and seasoning.
- Step 3: Spread the potatoes in a single layer on a large baking sheet. Avoid overcrowding the pan; use two baking sheets if necessary for even baking.
- Step 4: Bake for 30-40 minutes, or until the potatoes are tender and slightly browned, flipping halfway through for even cooking.
- Step 5: Remove the baking sheet from the oven and sprinkle the crumbled feta cheese evenly over the potatoes.
- Step 6: Return the baking sheet to the oven and bake for another 5-7 minutes, or until the feta cheese is melted and slightly golden. Garnish with fresh parsley, if desired, before serving.
