Ingredients
Scale
- 1 lb ground turkey
- 1 large green bell pepper, sliced
- 1 large red bell pepper, sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 cup soy sauce
- 1/4 cup honey
- 1 tbsp cornstarch
- 1/4 cup water
Instructions
- Step 1: Heat olive oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Step 2: Add sliced onions and bell peppers to the skillet. Stir-fry for 5-7 minutes, until the vegetables are tender-crisp.
- Step 3: Stir in minced garlic and cook for 1 minute more, until fragrant.
- Step 4: In a small bowl, whisk together soy sauce, honey, cornstarch, and water until smooth. Pour the sauce over the turkey and vegetables.
- Step 5: Bring the mixture to a simmer and cook for 2-3 minutes, or until the sauce has thickened and coats the turkey and vegetables. Serve hot over rice or noodles.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in the microwave or on the stovetop, adding a splash of water or broth if needed to prevent drying.
- Serve this stir-fry over fluffy rice, quinoa, or even zucchini noodles for a lighter option.
- For extra flavor depth, consider adding a pinch of red pepper flakes to the sauce or marinating the ground turkey in soy sauce for 30 minutes before cooking.
