Ingredients
Scale
- 1 large English cucumber, thinly sliced
- 8 ounces fresh mozzarella cheese, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, roughly chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic glaze
- Salt to taste
- Black pepper to taste
Instructions
- Step 1: Arrange cucumber slices, mozzarella slices, and cherry tomato halves alternately on a serving platter.
- Step 2: Scatter chopped fresh basil leaves over the cucumber, mozzarella, and tomato arrangement.
- Step 3: Drizzle the extra virgin olive oil evenly over the salad.
- Step 4: Drizzle balsamic glaze over the entire salad.
- Step 5: Season with salt and black pepper to taste.
Notes
- To prevent the cucumber from making the salad soggy, salt the slices lightly and let them sit for 10 minutes, then pat dry before assembling.
- This salad is best enjoyed immediately after assembling, as the balsamic glaze can make the mozzarella watery if stored for too long.
- Serve this refreshing salad as a light lunch, a side dish with grilled chicken or fish, or as an appetizer at your next gathering.
- For an extra burst of flavor, try adding a sprinkle of red pepper flakes or a squeeze of lemon juice before serving.
