Instructions
- Step 1: In a large bowl, combine the rolled oats, nut butter, honey or maple syrup, chia seeds, ground flaxseed, and shredded coconut.
- Step 2: Add chocolate chips or other desired flavorings (e.g., dried fruit, cocoa powder, spices) at this point.
- Step 3: Stir all ingredients together thoroughly until well combined.
- Step 4: If the mixture seems too dry, add a little more nut butter or honey, one tablespoon at a time, until it reaches a good consistency for rolling. If it seems too wet, add a bit more rolled oats.
- Step 5: Roll the mixture into bite-sized balls (about 1 inch in diameter).
- Step 6: Place the energy bites on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to allow them to firm up. Store in an airtight container in the refrigerator for up to a week.
Notes
- For best flavor, let the energy bites sit at room temperature for a few minutes before enjoying straight from the fridge.
- If your mixture is too sticky to roll, chill it for longer to help the ingredients bind.
