- 2 boneless, skinless chicken breasts
- 1 lb fresh green beans, trimmed
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chicken broth (optional)
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: In a large bowl, toss the green beans with 1 tbsp olive oil, 1/4 tsp salt, and 1/4 tsp black pepper. Spread them in a single layer on one half of the prepared baking sheet.
- Step 3: In a separate bowl, toss the chicken breasts with the remaining 1 tbsp olive oil, lemon juice, garlic powder, 1/4 tsp salt, and 1/4 tsp black pepper. Place the chicken breasts on the other half of the baking sheet.
- Step 4: Bake for 20-25 minutes, or until the chicken is cooked through and the green beans are tender-crisp. If you wish, add the chicken broth to the baking sheet during the last 5 minutes of cooking to create a bit of sauce.
- Step 5: Remove from oven and let rest for 5 minutes before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in the microwave or oven to avoid drying out the chicken.
- Serve this dish alongside a simple quinoa or brown rice for a complete and healthy meal.
- For extra flavor, marinate the chicken in the lemon juice and garlic powder mixture for at least 30 minutes before baking.
