Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Prepare a 9-inch springform pan by greasing it and lining the bottom with parchment paper.
  2. Step 2: In a medium bowl, combine graham cracker crumbs, ¼ cup granulated sugar, and melted butter. Press the mixture firmly into the bottom of the prepared springform pan to create the crust.
  3. Step 3: In a large bowl, beat cream cheese and 1 ¼ cups granulated sugar until smooth and creamy. Beat in flour and salt until just combined. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Step 4: Gently fold in ½ cup of the heavy cream. Pour the cheesecake batter over the graham cracker crust.
  5. Step 5: Bake for 50-60 minutes, or until the cheesecake is set around the edges and the center is just slightly jiggly. Let cool completely on a wire rack.
  6. Step 6: Once completely cool, whip the remaining ½ cup heavy cream to stiff peaks. Fold in the churro filling. Spread the whipped cream mixture over the top of the cooled cheesecake. Dust with cinnamon sugar. Refrigerate for at least 4 hours before serving.
