- Boneless, skinless chicken breasts: 4 medium
- Unsalted butter: 1 cup, softened
- Garlic: 4 cloves, minced
- Fresh parsley: 1/4 cup, finely chopped
- All-purpose flour: 1/2 cup
- Eggs: 2 large, beaten
- Breadcrumbs: 1 cup, panko or regular
- Vegetable oil: 2 cups, for frying
Instructions
- Step 1: Prepare the garlic butter: In a bowl, combine the softened butter, minced garlic, and chopped parsley. Mix well and shape into a log using plastic wrap. Freeze for at least 30 minutes, until firm.
- Step 2: Prepare the chicken breasts: Place each chicken breast between two sheets of plastic wrap and pound with a meat mallet until about 1/4 inch thick. Be careful not to tear the chicken.
- Step 3: Assemble the Chicken Kyiv: Cut the frozen garlic butter into 4 equal portions. Place one portion of garlic butter in the center of each chicken breast. Fold the chicken over the butter, carefully sealing the edges to prevent the butter from leaking out during cooking. Secure with toothpicks if necessary.
- Step 4: Bread the chicken: Set up a breading station with flour, beaten eggs, and breadcrumbs in separate shallow dishes. Dredge each chicken breast in flour, then dip in the beaten eggs, and finally coat thoroughly in breadcrumbs.
- Step 5: Fry the Chicken Kyiv: Heat vegetable oil in a large skillet over medium heat. Carefully place the breaded chicken breasts in the hot oil and fry for about 6-8 minutes per side, or until golden brown and cooked through. Ensure the internal temperature reaches 165°F (74°C).
- Step 6: Rest and Serve: Remove the cooked Chicken Kyiv from the skillet and place on a wire rack to drain excess oil. Remove the toothpicks (if used) and let rest for a few minutes before serving.
Notes
- Store leftover Chicken Kyiv in an airtight container in the refrigerator for up to 2 days.
- To reheat, bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until heated through, to help keep the breading crispy.
- Serve Chicken Kyiv with a bright lemon wedge and a side of mashed potatoes or asparagus for a complete and delicious meal.
- For extra flavorful garlic butter, gently sauté the minced garlic in a tablespoon of butter before combining it with the remaining butter and parsley.
