- 1 large head cauliflower, cut into florets
- 1/4 cup butter, melted
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Step 2: Steam or boil the cauliflower florets until tender-crisp, about 8-10 minutes. Drain well and set aside.
- Step 3: In a saucepan, melt the butter over medium heat. Whisk in the flour until smooth. Gradually whisk in the milk until there are no lumps. Bring to a simmer, stirring constantly.
- Step 4: Reduce heat to low and simmer for 5 minutes, or until the sauce has thickened. Remove from heat and stir in salt, pepper, cheddar cheese and half of the mozzarella cheese until melted and smooth.
- Step 5: Add the cooked cauliflower to the cheese sauce and stir to coat. Pour the mixture into the prepared baking dish.
- Step 6: Sprinkle the remaining mozzarella cheese over the top and bake for 20-25 minutes, or until golden brown and bubbly. Let stand for 5 minutes before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best reheating, cover with foil and bake at 350°F (175°C) until warmed through to prevent the top from burning.
- Serve this cheesy bake as a comforting side dish alongside roasted chicken or a hearty stew.
- Don't overcook the cauliflower; keeping it slightly firm will prevent it from becoming mushy in the bake.
