  • 1 large head cauliflower, cut into florets
  • 1/4 cup butter, melted
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Step 1: Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Step 2: Steam or boil the cauliflower florets until tender-crisp, about 8-10 minutes. Drain well and set aside.
  3. Step 3: In a saucepan, melt the butter over medium heat. Whisk in the flour until smooth. Gradually whisk in the milk until there are no lumps. Bring to a simmer, stirring constantly.
  4. Step 4: Reduce heat to low and simmer for 5 minutes, or until the sauce has thickened. Remove from heat and stir in salt, pepper, cheddar cheese and half of the mozzarella cheese until melted and smooth.
  5. Step 5: Add the cooked cauliflower to the cheese sauce and stir to coat. Pour the mixture into the prepared baking dish.
  6. Step 6: Sprinkle the remaining mozzarella cheese over the top and bake for 20-25 minutes, or until golden brown and bubbly. Let stand for 5 minutes before serving.

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
