Instructions
- Step 1: Combine the chopped apples, granulated sugar, brown sugar, apple cider, water, butter, cinnamon, and nutmeg in a large, heavy-bottomed saucepan. Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent sticking.
- Step 2: Reduce the heat to medium-low and continue to cook, stirring frequently, for approximately 30-40 minutes, or until the apples are completely softened and the mixture has thickened to a jam-like consistency. The jam should sheet off a spoon when you lift it out of the pot.
- Step 3: Remove the saucepan from the heat and carefully skim off any foam that has formed on the surface.
- Step 4: Ladle the hot caramel apple jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars clean.
- Step 5: Seal the jars with lids and rings, then process in a boiling water bath for 10 minutes (adjust processing time based on your altitude – consult a canning guide for specific instructions).
- Step 6: Remove the jars from the boiling water bath and let them cool completely. You should hear a "pop" sound as the jars seal. Check to make sure all jars have sealed properly. Store in a cool, dark place.
