Ingredients
- Cooked rice (preferably day-old) – 2 cups
- Eggs – 2 large
- Bacon or Sausage (cooked and chopped) – 1/2 cup
- Green onions (chopped) – 1/4 cup
- Soy sauce – 2 tablespoons
- Sesame oil – 1 teaspoon
- Frozen mixed vegetables – 1/2 cup
- Garlic (minced) – 1 clove
Instructions
- Step 1: Heat a wok or large skillet over medium-high heat. Add sesame oil.
- Step 2: Scramble the eggs in the hot skillet and cook until set. Remove the eggs from the skillet and set aside. Chop the eggs into smaller pieces.
- Step 3: Add the cooked rice and frozen mixed vegetables to the skillet. Stir-fry for 2-3 minutes, breaking up any clumps of rice.
- Step 4: Add the cooked bacon or sausage, scrambled eggs, and minced garlic to the skillet.
- Step 5: Pour the soy sauce over the rice mixture and stir-fry until everything is well combined and heated through, about 1-2 minutes.
- Step 6: Stir in the green onions and serve immediately.
Notes
- For longer storage, let the fried rice cool completely before refrigerating in an airtight container for up to 3 days.
- Reheat leftover fried rice in a skillet with a splash of water or broth to prevent it from drying out.
