Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
- Step 2: In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt. In a separate bowl, whisk together sugar, oil, eggs, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the grated carrots and nuts (if using).
- Step 3: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- Step 4: While the cakes are cooling, prepare the cream cheese frosting. In a large bowl, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, beating until light and fluffy.
- Step 5: Once the cakes are completely cool, frost the top of one layer with a generous amount of cream cheese frosting. Carefully place the second cake layer on top and frost the entire cake with the remaining frosting.
