- 8 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- Salt and freshly ground black pepper, to taste
Instructions
- Step 1: Preheat oven to 400 degrees F (200 degrees C).
- Step 2: In a large bowl, whisk together the olive oil, smoked paprika, oregano, garlic powder, onion powder, cayenne pepper, salt, and pepper.
- Step 3: Add the chicken thighs to the bowl and toss to coat evenly with the spice mixture. Make sure the spice mixture gets under the skin as well.
- Step 4: Arrange the chicken thighs skin-side up in a single layer in a baking dish.
- Step 5: Bake for 35-40 minutes, or until the chicken is cooked through and the skin is crispy and golden brown and the internal temperature reaches 165°F (74°C).
Notes
- Refrigerate leftovers in an airtight container for up to 3 days.
- For crispy skin again, reheat thighs in a skillet over medium heat, skin-side down.
- Serve these flavorful chicken thighs with a bright, citrusy salad to balance the richness.
- For extra flavor, try slipping some of the spice mixture directly under the chicken skin before baking.
