Ingredients
- All-purpose flour: 3 cups
- Granulated sugar: 1/2 cup
- Instant yeast: 2 1/4 teaspoons
- Salt: 1/2 teaspoon
- Milk: 1 cup, warmed
- Butter: 1/4 cup, melted
- Eggs: 2 large
- Mashed ripe bananas: 1 cup
- Chopped walnuts: 1/2 cup
- Ground cinnamon: 2 tablespoons
- Cream cheese: 4 ounces, softened
- Powdered sugar: 2 cups
- Vanilla extract: 1 teaspoon
- Milk: 2-4 tablespoons (for frosting consistency)
Instructions
- Step 1: In a large bowl, combine 2 cups of flour, sugar, yeast, and salt. Add warm milk, melted butter, eggs, and mashed bananas. Mix until just combined, then gradually add the remaining flour until a soft dough forms.
- Step 2: Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. Place the dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- Step 3: Punch down the dough and roll it out into a 12×18 inch rectangle. Brush with melted butter, then sprinkle with cinnamon and chopped walnuts.
- Step 4: Starting from the long edge, tightly roll up the dough. Cut into 12 even slices and place in a greased 9×13 inch baking dish. Cover and let rise for 30 minutes.
- Step 5: Preheat oven to 375°F (190°C). Bake for 20-25 minutes, or until golden brown. Let cool slightly.
- Step 6: While the rolls are baking, make the frosting: In a bowl, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth. Gradually add milk until desired consistency is reached. Spread frosting over warm rolls and serve.
Notes
- For best flavor, store leftover rolls in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 4 days.
- Reheat individual rolls in the microwave for 15-20 seconds or warm them in a 350°F oven for about 5-10 minutes to restore their soft, gooey texture.
- Serve these decadent rolls with a scoop of vanilla ice cream or a drizzle of warm caramel for an extra-special treat.
- Don't overmix the dough in Step 1; gently combining the ingredients ensures a tender, light cinnamon roll.
